Maturing is the final phase of the process of transforming milk into cheese which can last from a minimum of 12 months to a maximum of more than 24.
In the case of Parmigiano Reggiano, one of the typical Italian cheeses, it reaches maturing for 36 months.
Months obtaining a cheese produced from cow's milk with a full-bodied consistency and intense flavour.
Pecorino, on the other hand, comes from goat's milk which has completely different textures and aftertastes.
